Cheesy Corn Soup

Here is something we eat on chilly days.

Its a mostly homemade soup.


2 tablespoons of butter

1 small onion chopped

2 carrots chopped

1 head of broccoli

1 box of veggie broth (I use organic of course)

1 cup of frozen corn kernels

2 cups of grated cheese (I use mild cheddar but any cheese will do)

4 oz of cream cheese (half a box)

Salt and pepper to taste

**I use organic for everything I possibly can. Use what you are comfortable using though.

In your soup pot melt your butter. Then add your chopped onions and carrots and saute them.

As they are cooking take the head of broccoli and break off the small trees. Take them to your cheese grater and start grating off the tops. You will have a pile of little bits of dark green. I really love broccoli in my soup so I will use the whole head but use what you are comfortable with.

When the onions and carrots are soft add the box of veggie broth and broccoli bits to your cooking pot and bring to a soft boil.

Add the cup of frozen corn kernels (or more if  your heart desires), 2 cups of grated cheese and 4 ounces of cream cheese. Stir continuously so as not to burn. You may want to turn down the heat a bit as it all begins to be melted in.

Grab a bit of bread and taste it. You are going to need to season it with salt and pepper to taste.  I love pepper so I add about a teaspoon…and a teaspoon of salt too.


Now all you need is a roaring fireplace, a good book and you have  the perfect evening!!
